I’m on my second round of the Autoimmune Protocol (AIP), which has been much more successful than my first round three years ago (when I was diagnosed with Hashimoto’s). From November to February of this year, my husband I were living in Asia and when we returned, I knew something was off with my thyroid… I was right. My antibodies were up 300% (more on this later). I went from experiencing many Hashimoto’s symptoms to watching most disappear while on AIP. Although I give AIP much of the credit, a medication change, hormone protocol, and candida killing, etc. have also been helpful.
It’s been three months since I started this round of AIP and the only thing I’ve reintroduced so far is black pepper (although I have had alcohol on two different occasions, keeping it real with y’all). I will start some more reintros soon. AIP has become my new norm and while I once saw it as a restricting challenge, it has become a simple constant in my life and my kitchen. I contribute much of my AIP success to the culinary geniuses around the web who have helped me keep AIP delicious, easy and inspired. Sharing personal stories, recipes, and tips really does impact others!
My favorite Autoimmune Protocol recipes are listed below. My husband has tried all of them as well and agrees that they are fantastic (he doesn’t eat an AIP diet), they will be enjoyed by even the pickiest eaters.
